Xisto Ilimitado Red 2021

Xisto Ilimitado 2021 is known by its name, it reflects Luís Seabra's philosophy of exploiting the potential of the region's schist soils to the full. He endeavours to create wines that express the authentic character of the old vines, many of which are planted on slopes that are difficult to access. It pairs well with richer, more substantial dishes, roast meats, game dishes or mature cheeses.

Vinification: The two vineyards were harvested separately and the grapes were vinified in open-topped vats made from reclaimed old Port wood, both with 60% of the stems. Total maceration of 29 days, after which the wine was pressed and aged in 350L barrels and 228L barrels for the Ervedosa wine. Malolactic fermentation was in barrels, in contact with the lees, and the wine was aged for a total of 18 months.

Tasting notes: Bright garnet colour. Complex aromas, with notes of fresh fruit, forest berries and pine needles, and a slight hint of smoke. Intense and fresh on the palate, with great depth and acidity, showing a solid structure with tannins that are present, lively and balanced. The finish is long and persistent.
