César Márquez ‘Valtuille’ 2022

Valtuille 2022 is the village's red wine and its first vintage will be in 2016. It is a tribute by César Márquez to the village where he grew up and where he has always lived.

Vinification: The grapes are harvested by hand. Fermentation takes place mostly in 1000-litre vats, with 15% of the grapes being whole. Each parcel is vinified separately, including the white grapes in the blend as they appear in the vineyard. The grapes are gently crushed so that part of the grapes remain whole during fermentation, which is carried out spontaneously by the yeasts themselves, without the addition of any other yeast. Maceration lasts between 15 and 25 days, during which time the daily work consists of lightly wetting the cap once a day. The wine is then bled and pressed and left to decant for 7 days. After this process, the wine is placed in 500-litre barrels for 12 months.

Tasting notes: It is juicy, round, harmonious and fruity with moderate ripeness. It shows elegance and freshness (given the hot, dry year) together with precision and purity.
