César Márquez 'Parajes' 2022

Parajes 2022 is a regional red wine. Grapes from different areas of El Bierzo were used in its production, with each plot being made separately.

Vinification: The grapes were harvested by hand, each plot fermenting independently, with the final blend having around 20% whole grapes. The grapes are gently crushed so that part of the grapes remain whole during fermentation, which is carried out spontaneously by the yeasts themselves, without the addition of any other yeast. After pressing, the wine is placed separately in barrels (225, 400, 500 and 600 litres). After a year, the barrels are emptied and the different parcels are blended.

Tasting notes: It's super fine and elegant, fresh and balanced with moderate ripeness. It's a medium-bodied wine with very fine tannins and great balance. The tannins are round and fine-grained and the mouthfeel is juicy and tender.
