David Moret Perrières 2020 is one of the top whites from this micro-négociant in Beaune, dedicated to Chardonnay from the Côte de Beaune since 2000. The grapes come from the legendary Les Perrières climat, one of the three most prestigious Premier Crus in Meursault, often considered “almost Grand Cru” thanks to its stony limestone soils and the sharp minerality they impart to the wine. 2020 was hot and very dry, with rapid ripening but surprising freshness: early harvest, perfectly ripe fruit, firm acidity and great aromatic purity. The whites of the Côte de Beaune combine intensity, mineral tension and balance, with excellent ageing potential.
Vinification: Grapes harvested by hand, immediately pressed in a pneumatic press to preserve the delicate aromas. Alcoholic and malolactic fermentation takes place in French oak barrels, followed by 18 months of ageing on fine lees, with 30% new wood, in an approach that favours purity and minerality over oak extraction.
Tasting Notes: Bright golden straw colour. Nose: lemon, green apple and white peach, enveloped by notes of white flowers, toasted almonds and wet stone, in a very precise and tense ensemble. Palate: medium-bodied, creamy but slender, with well-defined orchard fruit, vibrant acidity, chalky texture and a long, salty and deep finish, a serious, gastronomic Meursault Perrières, for fatty fish, scallops or poultry in a rich sauce.
