David Moret Perrières 2019 is one of the cult whites from this micro-négociant in Beaune, specialising in Chardonnay from the Côte de Beaune. Without any vineyards of his own, Moret buys small parcels of grapes and vinifies everything in his cellar, with minimal intervention. Les Perrières is one of the most prestigious climats in Meursault, often described as ‘almost Grand Cru’ for its stony limestone soils and the wine's sharp minerality. 2019 saw frosts in April, a cold and rainy June, and then a hot, dry summer, which concentrated the berries and reduced yields. The grapes arrived very ripe but with excellent freshness, producing intense, tense whites with great ageing potential.
Vinification: Grapes harvested by hand, immediately pressed in a pneumatic press and fermented with indigenous yeasts in French oak barrels. Complete malolactic fermentation and aged for 12 to 15 months in barrels (up to 40% new wood). Bottled without fining or filtration, after natural clarification in barrels.
Tasting Notes: Bright straw-gold colour. Nose: very fragrant, with notes of lemon, green apple and white peach, enveloped by a hint of smoke and a touch of dried fruit. Palate: concentrated and full, with a mouth-filling texture, vibrant acidity and a stony, almost salty minerality that lengthens the finish. A serious, deep and gastronomic Meursault Perrières, perfect for fatty fish, scallops and poultry in rich sauces.
