César Márquez 'Pico Ferreira' 2022

Pico Ferreira is a single vineyard wine located in a place that lives up to its name. This wine, like the rest of the wines in the range, aims to represent the site, intervening as little as possible in it, respecting traditional winemaking methods. A schist soil also gives it a peculiar note.

Vinification: The grapes are fermented by hand in open vats with 20 per cent whole grapes. The grapes are gently crushed so that part of them remains whole during fermentation, which is carried out spontaneously by the yeasts themselves without the addition of any other yeast. The maceration took place over 45 days, during which time the work consisted of sinking the cap a little every day. After bleeding and pressing, the wine was decanted for 7 days. After 7 days, the wine is placed in 500 and 600 litre barrels and left to rest for 12 months.

Tasting notes: Medium cherry red colour. Inviting, smoky, dusty and rocky nose, but still with beautiful fresh red fruit. Chalky, dry and refined texture, marvellously fresh and subtle, but persistent. Jancis Robinson
