Jacques Lassaigne La Colline Inspirée Blanc de Blancs Extra Brut is Emmanuel Lassaigne's flagship cuvée from Montgueux, the chalky ‘hill’ known as the Montrachet of Champagne. It pays homage to this sunny, chalky terroir, where old Chardonnay vines produce Champagnes with an almost Burgundian character: deep, mineral and very gastronomic. This is a non-vintage Champagne, made from several harvests to ensure consistency and complexity. The vines, which are over 40 years old, are cultivated organically, with moderate yields that favour concentration and freshness, resulting in a tense, dry wine with great gastronomic potential.
Vinification: It comes from 2-3 plots of clay-limestone soils. Hand-picked, fermented in stainless steel with indigenous yeasts and left in contact with the fine lees for 8 months. This is followed by a very long ageing in the bottle, in the cellar, for several years before dégorgement, with a very low dosage in Extra Brut style, to preserve the pure expression of Montgueux Chardonnay.
Tasting notes: On the nose, white and citrus fruit, exotic notes, a touch of dried fruit and pastry, enveloped by a marked minerality of chalk and a hint of toasted brioche. On the palate, it is full-bodied, creamy and very fresh, with very fine bubbles, excellent structure and a long, dry and salty finish. A signature Champagne, perfect for seafood and oily fish.

There are lovely, up front, crazy coconut and tropical fruit aromas, along with a bit of spice and tangy barrel-aged oxidative notes. The texture is one of silky perfection. The freshness, the density of the fruit, and the complexity of the ageing create terrific dynamic tension on the palate. This is blended from base wines from 2018 (12 months in barrel on the lees), 2017 (24 months), 2016 (36 months), and 2015 (48 months), and aged on the lees before disgorging in January of 2022 – a superb wine.
Very small production. Light and focused and very pure. Slim-line wine with real structure.
Aromatic, featuring apple blossom, bread dough and sous-bois notes, this well-structured version is underscored by a hint of chalk-tinged minerality, with the mouthwatering impression enlivening refined layers of poached apple and pear, crystallized honey, lemon curd and candied ginger. Drink now through 2020. 250 cases made.
