Cazé-Thibaut Millésime Extra Brut 2017 is produced in Châtillon-sur-Marne, in the heart of the Vallée de la Marne, where Fabien Cazé restored the family vineyards and converted them to organic viticulture. In this terroir cuvée, the idea is to showcase the purest and most gastronomic character of Pinot Meunier in a single-harvest ‘Blanc de Meunier’ version. In 2017, a challenging year in the region, the producer resorted to rigorous selection in the field to harvest only perfectly ripe grapes, capable of combining concentration, freshness and a mineral profile, resulting in a Champagne with great tension and ageing potential.
Vinification: Manual harvest, fermentation and ageing in oak barrels, with long months on fine lees in an old crayère, before several years of ageing in the bottle. The estate works organically, with sugar doses decided only after tasting; here the dosage is very low (c. 1.8 g/L), classifying the wine as Extra Brut and preserving the identity of the terroir.
Tasting notes: The nose reveals layers of white fruit and citrus (green apple, pear, ripe lemon), dried fruit, white flowers, notes of brioche and a hint of chalk. On the palate, it is vinous and precise, with fine mousse, crisp acidity, hints of almond and toasted bread and a long, salty and very gastronomic finish, ideal for accompanying signature cuisine, fatty fish or truffled poultry.

The 2017 Extra Brut Millésime, 100% Pinot Meunier, is a pretty, exotic wine. Dark in color and quite intense, the 2017 offers hints of apricot, spice, hazelnut and abundant tropical fruit. Very low yields (since abandoned as a stylistic choice) resulted in an unusually intense, quirky wine. Dosage is 1.8 grams per liter. Disgorged: March 7, 2023
