Chappellet Signature 2021 is a full-bodied, elegant red wine produced in the mountainous region of Pritchard Hill, California. It is renowned for its poor volcanic soils, excellent sun exposure and high altitude, ideal conditions for growing high-quality Cabernet Sauvignon. The combination of several factors has resulted in a powerful, well-structured wine with great aromatic depth.

Vinification: Hand-harvested in small bunches. Grapes undergo intense maceration. Each plot was fermented separately in small vats to maintain the identity of the local microclimates. Aged for 22 months in French oak barrels, where micro-oxygenation imparted complexity and tannin smoothness.

Tasting Notes: Deep, vibrant purple colour. On the nose, it displays intense aromas of cassis, black cherry, blackberry and blueberry, combined with floral notes (dried lavender), graphite, damp earth, tobacco and fresh herbs such as sage and aniseed. There is also a hint of sweet spices, vanilla, cloves and subtle hints of dark chocolate and coffee from the ageing in French oak. On the palate, it is full-bodied, with silky but structuring tannins, showing balanced acidity, freshness and a creamy texture. The finish is long, dry and persistent, with echoes of spices, black fruit and mineral nuances. It is an intense but elegant wine with excellent depth and ageing potential.

An extra-dark color and heady aromas of crushed blueberries and blackberries leads to super-concentrated black fruits and milk chocolate on the palate, where silky tannins put a gentle grip around all that flavor. The wine is huge in pure fruit depth yet well-polished in texture. Best from 2027–2034.

Deep purple. Sweet macerated blackberry and blueberry nose with lovely freshness from soft green thyme and subtle mint. Medium levels of extract on the palate with fresh acidity and lightly sandy tannin. Oak spice and vanilla very prevalent on the finish.

Aromas of cassis and dark berries with sweet spices, dried orange peel and minty undertones. Hints of walnuts, too. Medium- to full-bodied with well-integrated, melting tannins. Very silky texture. Succulent and layered, ripe but bright and vivid. Delicious fruit. Long. Attractive now, but better after 2025.

Crushed raspberry, blackberry, rose petal and violets combine to make this an arresting opening, fragrant and characterful. As things settle in the glass, waves of cocoa bean, espresso and deeper cassis notes arrive. Great quality, with balance and a sense of easy welcome. Philip Titus winemaker 41ha of vines.

Domineered by scents of ripe cherries and loamy earth, the 2021 Cabernet Sauvignon Signature is a strong effort, a blend of 79% Cabernet Sauvignon, 8% Petit Verdot, 7% Malbec and 6% Merlot. Medium to full-bodied, with an appealingly taut structure and silky tannins, it should be approachable young yet capable of aging for more than a decade.

Leading off the Cabernet Sauvignon releases, the 2021 Cabernet Sauvignon Signature is a larger production release and is 79% Cabernet Sauvignon and nearly equal portions of Petit Verdot, Malbec, and Merlot. Smoky black fruits, graphite, crushed stone, and tobacco notes give way to a medium to full-bodied, concentrated, powerful 2021 offering ample mid-palate depth, a layered, textured, balanced mouthfeel, building tannins, and a gorgeous finish. It's a brilliant bottle of wine that will benefit from short-term cellaring and have over two decades of longevity.

The 2021 Cabernet Sauvignon Signature is a dense, potent wine. A strong mid-palate and core of fruit gives the 2021 its sense of poise. Plum, blood orange, sweet spice and Kirsch fill out the layers. At once both plush and structured, the 2021 is a fine choice for drinking over the next handful of years, but it is a big wine.
